Cauliflower Rice 🍚 🍛

Ingredients:
1 large cauliflower head
1 cup carrot, julienned
1/2 cup peas
1 cup broccoli florets
1 medium yellow onion, diced
3 cloves garlic, minced
3 tb olive oil
Stir Fry Sauce
1/4 cup low sodium soy sauce
1/4 cup water
1 ½ tablespoons maple syrup or honey
1 teaspoon red pepper flakes
1/2 teaspoon ginger powder
Optional toppings: tofu, avocado, green onions, fresh herbs, chicken, eggs.
Cooking Instructions:
1. Prepare rice. If using a box grater, cut the cauliflower into large chunks and use the medium-sized holes to grate into "rice." If using a food processor, cut into small pieces and use the grater attachment to grate the cauliflower into "rice."
2. Prepare stir fry sauce. In a small bowl, whisk together ingredients for the stir fry sauce. In a large skillet, heat half the sauce and olive oil to medium.
3. Sauté vegetables. Add onion and sauté 5 minutes, until soft and translucent. Add carrots, broccoli, peas, and garlic. Continue to sauté for 5-8 minutes until veggies have softened. Add riced cauliflower and sauce. Sauté 5-7 more minutes.
4. Serve into bowls with slices avocado, fresh cilantro, green onions, protein like chicken, eggs, tofu or whatever your heart desires!
